It is carefully collected by hand from the top of the salt marsh before it is submerged,
incorporated and crystallized with the rest of the salt.
The salt flower is collected in a few parts of the world, washed by hand, dried in the sun and
standardised in small quantities.
This salt retains a significant amount of moisture because it has not undergone any chemical
or other treatment. It has a natural white colour since it has not been bleached like common
salt, and its unique texture gives it its particular crystalline form, its soft taste and also helps
to preserve its characteristics. It is rich in trace elements essential for the human body. It
dissolves more quickly than common salt and is therefore best added to food just before it is
served.
